Toffee fondue

Ingredients

  • 50g Butter (unsalted)
  • 110g Demerara sugar with stevia
  • 2 tbsp Golden syrup
  • 100ml Double cream
  • 0.5 tsp Vanilla extract
  • 1 tbsp Black treacle
  • 200g Strawberries
  • 2 Peach(es) (sliced)
  • 0.5 Pineapple (cut into chunks)
  • 3 tbsp Unrefined golden caster sugar
  • 4 Brioche (slices)

Method

  1. Put all the fondue ingredients in a saucepan set over a high heat and boil for approximately 4-5 minutes, stirring regularly, until it has thickened.
  2. Thread the fruits on wooden skewers. Sprinkle with caster sugar and grill on the barbecue for about 3-4 minutes until just scorched and tender. Toast the brioche for a few seconds each side on the bbq and serve with the fruit and toffee sauce.
