We can't shout about this easy no-bake vanilla cheesecake recipe enough. Not only is it a bakeless cheesecake, giving you (and the cheesecake) chilling time while it's in the fridge, it's also blooming scrumptious.&nbsp;
A crisp and buttery&nbsp;vanilla shortbread base, topped with creamy vanilla goodness - what more could you want?
To get the depth of flavour we love, we've used Nielsen-Massey Vanilla Bean Paste. It's the perfect vanilla choice for no-bake vanilla cheesecakes, giving your pudding the rich flavour from a vanilla extract and the beautiful vanilla seed flecks throughout that you would normally have to fiddle about with a vanilla pod to achieve. It really is one of baking's best-kept secrets!

No Bake Vanilla Cheesecake

Of course Santa is the star of the show at Christmas, but how would we possibly get all of our presents on time if it wasn't for his trusty steed, Rudolph?
&nbsp;This year, make him your festive party centrepiece, created with layers of rich chocolate sponge and chocolate buttercream, perfect for if traditional fruit cakes aren't your thing. Don't worry though, no real Brussel Sprouts were harmed in the making of these, they are actually made of the most incredible tasting chocolate and peanut butter truffle, using our favourite local Proper Nutty Peanut Butter. Coat with green candy melts and decorate with little faces to really bring them to life.
We made our own Madiera cake for this recipe - and used about 1/3. But any plain chocolate cake will do as long as it isn't too moist. The crumbs need to be fairly dry. The undecorated balls will keep for one week in the fridge. Once decorated, the truffles should be eaten within 5 days.
