For all those that love coffee this coffee buttercream is the perfect topping for a coffee and walnut cake.

    Ingredients

      • 3 tspInstant coffee
      • 1 tspBoiling water
      • 250gUnsalted butter (softened)
      • 500gSilver Spoon Icing Sugar

    Method

    1. Step 1

      Dissolve 3 tsp instant coffee in 1 tsp boiling water and leave to one side to cool.

    2. Step 2

      In a seperate bowl beat together the softened butter and icing sugar until smooth then beat in the cooled coffee mixture.

    3. Step 3

      This buttercream should make enough to ice 12 or more cupcakes and a large sponge cake.

    I made the coffee buttercream, but couldn’t really taste the coffee. I doubled
    the amount of coffee and was mindful when adding extra liquid, so made it as viscous as possible, without being too thick that it wouldn’t incorporate. This is not a criticism of the recipe, it was likely to be the coffee I used. I think mine was too mild maybe.
