Cherry Jam

Ingredients
For the Jam
1.1kg | Cherries (Stoned) |
120ml | Water |
3tbsp | Lemon Juice |
1.4kg | White Granulated Sugar |
250ml | Pectin |
Method
- Simmer the cherries in the water and lemon juice in the covered pan for 15 minutes.
- Add the sugar and heat gently, stirring occasionally until the sugar has dissolved.
- Bring to a full rolling boil and boil rapidly for 1 minute
- Stir in the apple pectin and continue boiling for 1 minute.
- Remove from the heat, skim if necessary, cool slightly, pot and cover.
