For the Jam

1.1kgCherries (Stoned)
3tbspLemon Juice
1.4kgWhite Granulated Sugar


  1. Simmer the cherries in the water and lemon juice in the covered pan for 15 minutes.
  2. Add the sugar and heat gently, stirring occasionally until the sugar has dissolved.
  3. Bring to a full rolling boil and boil rapidly for 1 minute
  4. Stir in the apple pectin and continue boiling for 1 minute.
  5. Remove from the heat, skim if necessary, cool slightly, pot and cover.
