Apricot & Pistachio Flapjacks

Ingredients

For the Flapjacks

250gFlaked Oats
25gHalf Spoon Sugar
140gApricots (Dried)
½tspMixed Spice
2tbspRunny Honey
1tspVanilla
2tbspGolden Syrup

Method

  1. Melt the butter, syrup, honey, Half Spoon and vanilla in a saucepan on a gentle heat.
  2. Roughly chop the apricots & pistachios and mix with the mixed spice and oats. Add the melted butter mixture and stir until combined.
  3. Pour the mixture into a greased 18cm square baking tin and bake for 20-25 minutes at 180ºC (Fan 160ºC/Gas Mark 4) until golden and slightly crisp around the edges.
  4. Leave to cool in the tin for 10 minutes then mark into 20 squares, leave to cool completely before removing.
