Mince Meat and Apple Strudel
A great lightweight apple pie packed full of flavour. This strudel is suitable for home freezing.

How to Prepare
1. Preheat oven to 200°C, 400°F, Gas Mark 6.
2. Peel, core and slice the apples into a bowl of salted water to prevent them from turning brown. Rinse with fresh water and drain then place in a saucepan with the dried fruit, spice and cider.
3. Simmer gently for 10 minutes until the apple starts to soften. Remove from heat and stir in the rum Ð allow to cool.
4. Place one filo pastry sheet onto a tea towel and brush with beaten egg.
5. Add the remaining sheets, one at a time, brushing each layer with beaten egg.
6. Spread the fruit mixture over the pastry, leaving a 2.5cm boarder around the edge.
7. Sprinkle with the Silver Spoon Low Calorie sweetener then fold in the two short sides and roll up like a swiss roll.
8. Bake in a preheated oven for 20 minutes until golden brown.
9. Serve hot dusted with icing sugar.
